No-Bake Strawberry Icebox Cake

See this? This is such an easy dessert. It looks a little fancy, doesn’t it? Don’t be put off. It only takes a few ingredients, and it doesn’t even involve turning on the oven.

This particular icebox cake is just as simple as it gets, inspired by the buckets of strawberries at the markets in late spring, and by my favorite dessert: strawberry shortcake. It has layers of graham crackers, barely sweetened whipped cream, and sliced fresh strawberries. It’s rich, but it’s hardly sweet at all.

Mango Coconut Icebox Cake

Coconut is a polarizing ingredient. Some people who can’t get enough of it, and other people flick it away like a bug. I can empathize with both. Coconut wafts in with the scent and taste of the tropics, but the problem, I suspect, for most haters is the texture; on a scale of tenderness, shredded dried coconut can fall somewhere between hay and chopped toothpicks.

So this icebox cake avoids shredded coconut entirely. The creamy layers come by their coconut richness without it, and the top is sprinkled with toasted flakes, which have more in common with nuts than hay. And then there’s the mango — lots and lots of mango.

Lemon Cream Icebox Cake

This lemon cake is super simple: Whip cream with fresh lemon zest and lemon juice, then layer it together with lemon curd (store-bought, or make it yourself), and yummy graham crackers. It’s intensely lemon-flavored, with lots of pucker to balance the sweetness, and the nutty, browned-butter taste of the graham crackers supporting the brightness of the lemon.
