Cauliflower & Sausage Casserole

Vegetables too often get short shrift in casseroles. Not so here. In this dish, cauliflower is the star. And it is delicious.

Instead of making a dish with pasta or rice, this recipe uses tender yet firm bites of cauliflower, and tosses them with tomato sauce and just a bit of sausage for flavor and body. The result is a tangy, rich dish that would satisfy anyone. You can happily serve this as a main dish or as a side.

Close-To-Restaurant Sweet Potato Fries

Really good sweet potato fries are a surprisingly difficult thing to achieve. Even in restaurants, they often arrive limp, soggy, and the exact opposite crispy. But these sweet potatoes felt firm and had a nice bite. You can dunk them in the dipping sauce without worrying that they are going to break off or be too limp to scoop anything up. These are really the closest to restaurant fries you will ever get.

Applesauce Cake with Caramel Glaze

Who could resist such a decadent dessert? This spiced applesauce cake, topped with Southern-style caramel icing, does not disappoint. And the caramel glaze is the perfect complement to this tender, spiced, and just slightly sweet cake.

Note: You may want to glaze the cake right on the plate you plan to use to serve it, forgoing the rack. As soon the glaze has even the slightest chance to set, it will crack if you try to transfer the cake from rack to serving plate.
