White Chicken Chili

It’s a one pot meal that you can have on the dinner table in under an hour. The chili is made with a store bought rotisserie chicken, which makes it easy. Always shred the chicken as soon as you get home from the grocery store — it’s easier to do while the chicken is still warm, eliminates a step at dinnertime, and also takes up less room in the fridge. Three chili peppers might seem like a lot but the chili is still relatively mild. Three-Bean Chili

It’s an easy, but tasty recipe spiced up with jalapeno pepper and cayenne pepper. A touch of brown sugar tones down the acidity of the tomatoes. We’ve used kidney beans, black beans, and chickpeas but you can use any type of canned beans that you have on hand.
