No Knead Beer Bread

Beer Bread is buttery, chewy, and tastes like your favorite beer.  Be wise, however, in choosing the beer you use. A beer with fruit tones will lend a sweeter, fruity bread. Likewise, a dark ale will lend a robust flavor to the final product. I recommend you use a beer you know and love. Beer bread is excellent when sliced and spread with butter, cubed and sprinkled on top a thick, hearty chili, or dipped into a spinach or cheese dip. Give it a try—the recipe couldn’t be easier! Beer Battered Fish and Chips

Why “Beer Battered”?

Beer makes such a great base for batter because it simultaneously adds three ingredients—carbon dioxide, foaming agents and alcohol—each of which brings to bear different aspects of physics and chemistry to make the crust light and crisp.  The beer contributes a nice, yeasty flavor. It’s the stuff that gives fish and chips that “wow” factor. Be sure that the beer is cold. Along with the carbonation of the beer the temperature helps make the batter crisp.

So, which beer should you use?

The beer that works in the batter will generally be the correct beer to drink with the final dish.
If deep-frying seafood use the following beer in the batter:

  • Flathead – Lager or a Pale Ale.
  • Cod –Pale Ale or an English Bitter
  • Sardines – a Japanese Lager
  • Oysters – Stout or Porter

 

Ok then, why Cod?

Cod is perfect for Fish and Chips.  With it’s mild flavor, low fat content and a dense, flaky white flesh, it’s no wonder cod is one of the most common fish used for fish & chips along with haddock.

Sweet Brown Rice Kugel

Kugel is one of those words that doesn’t really have a good English translation. It’s not quite a casserole, or a pudding, but those are probably the closest descriptions.

Traditionally kugels were fried, and since most frying pans are circular, the kugels came out round, which is where the name comes from.  Nowadays, kugels are typically baked in square or rectangular pans.

This is a brown rice kugel that is tasty, nutritious, and gluten-free. It’s similar to rice pudding, but a little more solid so you can cut it into pieces.

Pomegranate Coleslaw

Pomegranate is a fruit that has been cultivated and naturalized over the whole Mediterranean region since ancient times.  They are high in antioxidants, have a sweet flavor, and have a gorgeous colorful appearance. Over the years they have grown in popularity and are used in Kosher recipes during Rosh Hashanah.

All American Apple Pie

Quick and easy, with a great non-crust topping.

We admit we had doubts about the crust but it turned out great. It was nice to be able to make a pie without getting flour all over.

(For those of you having trouble with the topping, keep in mind that the butter/margarine needs to be cold -out of the fridge, not at room temperature – in order to make crumbs.  Can’t go wrong with this one.

Good Galas

These early season apples are immensely popular. Gala apples ranked at number 2 in 2006 on the US Apple Association’s list of most popular apples. They are sweet and aromatic, with a size that fits nicely into a child’s hands. It can be added in salads, or cooked, and is especially suitable for creating sauces. And if a Gala apple reminds you somewhat of a Gold Delicious – it should – they are related!
