Make-Ahead “Ham & Cheese” Breakfast Casserole

This is one of thekitchn.com’s most popular recipes ever, published several years ago for a breakfast bake with bread, pancetta, Gruyere, and eggs. It’s rich, eggy, and unbelievably, incredibly delicious.

And for an added appeal: You throw everything in the dish the night before, allow the bread to soak up the egg-and-milk mixture overnight, and bake it in the morning. But while the make-ahead aspect of this dish is very convenient, you don’t have to make it ahead. You can also throw it together and bake it immediately.

Cheese Blintzes with Blueberry Sauce

The filling of these classic cheese blintzes gets its perfect consistency from a mix of cottage and farmer cheeses. A simple blueberry sauce tops off the dish. If blueberries aren’t in season, frozen berries can be substituted. Use unsweetened, and do not defrost them before combining with the sugar and cornstarch.

Three Cheese Tomato Tart

Here’s a retro tomato pie (with a little makeover).  A frozen puff pastry is just the solution to cut a few minutes from the recipe.

This makes a perfect summer appetizer, but you can enjoy it as a special lunch all on your own. This is one of those recipes that just takes you aback the first time you have a bite. You just won’t believe how delicious (and easy) it is! And then you find yourself standing in the kitchen, shoveling eating slices without even getting a plate. And that’s when you know you’ve had success, right?

Turkey, Bacon, and Havarti Sandwich

Stack leftover sliced turkey with cheese and other toppings on a fresh sourdough loaf to make four sandwiches in one. Havarti is a Danish cheese that is semi-soft with small irregular holes and a mild flavor. You can substitute whatever you have on hand, including Muenster or Swiss cheese for Havarti and cranberry sauce in place of bell peppers and vinaigrette.

Ingredients

  • 1 (7-inch) round sourdough bread loaf
  • 1/4 cup balsamic vinaigrette
  • 1/2 pound thinly sliced smoked deli turkey
  • 6 (1-oz.) Havarti cheese slices
  • 1 (12-oz.) jar roasted red bell peppers, drained and sliced
  • 4 fully cooked bacon slices
Preparation

1. Cut top 2 inches off sourdough loaf, reserving top; hollow out loaf, leaving a 1-inch-thick shell. (Reserve center of bread loaf for other uses, if desired.)

2. Drizzle 2 Tbsp. vinaigrette evenly in bottom bread shell; layer with half each of turkey, cheese, and peppers. Repeat layers with remaining turkey, cheese, and peppers, and top with bacon. Drizzle evenly with remaining 2 Tbsp. vinaigrette, and cover with reserved bread top; press down firmly.

3. Wrap in plastic wrap, and chill at least 1 hour or up to 8 hours before serving. Cut into 4 wedges.
