King Ranch Casserole

King Ranch Casserole is just like any other good Southern casserole (you know — a creamy, dreamy, oh-so-delicious hot mess), but with its own unique Texas flair. It’s similar to a Tex Mex lasagna: layers of toasted flour tortillas are smothered in a cumin- and chili powder-spiked cream sauce, along with heaps of grated cheese. To say it is hearty is an understatement — this dish was meant to warm souls and mend heartaches.

Chili con Carne

Chili is practically a religion in Texas. The thick, meaty “bowl of red” dates back to San Antonio in the 1820s. By the 1880s, the city’s plazas were full of pushcarts run by “chili queens” who would lure customers with live music. And Texans may argue about chili ingredients—but purists agree that the hearty stew would never, ever involve beans.chili con carne

White Chicken Chili

It’s a one pot meal that you can have on the dinner table in under an hour. The chili is made with a store bought rotisserie chicken, which makes it easy. Always shred the chicken as soon as you get home from the grocery store — it’s easier to do while the chicken is still warm, eliminates a step at dinnertime, and also takes up less room in the fridge. Three chili peppers might seem like a lot but the chili is still relatively mild. The key is to remove and discard the seeds — that’s where most of the heat is — unless, of course, you like a spicier chili, in which case you can save the seeds and stir them in at the end to taste.chili white chicken chili

Three-Bean Chili

It’s an easy, but tasty recipe spiced up with jalapeno pepper and cayenne pepper. A touch of brown sugar tones down the acidity of the tomatoes. We’ve used kidney beans, black beans, and chickpeas but you can use any type of canned beans that you have on hand. Of course chickpeas aren’t technically beans, but they fit right in and provide some texture contrast.chili 3 bean
