Double Chocolate Butterscotch Breakfast Muffins

These muffins freeze ridiculously well and keep for up to a week (if they don’t get devoured before then) in an airtight container.  They are heaven when paired with a tall glass of cold milk.

If you’re not big on butterscotch you could plump some dried cranberries and toss them in, or add extra chocolate chips or just omit them completely.

Chocolate Zucchini Muffins

Chunky Apple Muffins

A can’t-resist breakfast treat combines autumn’s flavors: cinnamon, toasted nuts, and tart Granny Smith apples. Muffins freeze and reheat beautifully. If you choose to freeze your muffins in a freezer safe bag make sure to squeeze out any extra air first. Then place that bag inside another freezer safe bag to prevent freezer burn.  To reheat, microwave them for 15-20 seconds or put them in the fridge to thaw overnight. A quick 5 seconds in the microwave is all they need if you took them out overnight.

Bacon Egg and Toast Muffins

We all love those big breakfast egg casseroles, but for our busy lives, the idea of getting up an hour early on a work day to pop this in the oven is just too much. And let’s be real. We’d just end up tossing a banana at the kiddies and having them eat in the car on the way to school.

These are quick and easy to prepare the night before and maybe, just maybe, you could find a few minutes to sit with your family and enjoy breakfast before you start your day.
